After Graduating from Northern Ireland hotel & Catering College in 1999 Darren went on to run his own restaurants for the next 15 years, winning awards for using local ingredients.

Darren joined the NHS in 2013 as a cook making higher quality nutritious meals for patients through a cook-chill process as well as making fresh nutritious meals for staff before becoming Catering Supervisor in the Causeway Hospital.

In 2023 Darren was part of the duo that won gold in the NHS 4 nations Challenge before being winners of the HRC Four Nations Challenge in 2024
